Istrian fritada (fried eggs) with truffles

For 4 persons.

– Istrian prosciutto 50g

– Tartufete (truffle slices) 80g

– Truffle flavoured olive oil

– 8 eggs

– Parmesan

PREPARATION: Braise prosciutto on oil (chopped in small pieces) and add Tartufete; then braise 5-6 minutes on reduced heat. Add 2 small spoons of truffle flavoured olive oil and add stirred out egg salted as per wish. Cook until the eggs are done (“fritada” can be “softer” or “harder” depending on your taste). Serve warm and sprinkle Parmesan as per wish.
