Sakura® Cress – duck – grapefruit – honey

2 duck fillets

1/2 grapefruit

10 g honey

5 g rice vinegar

5 g ginger syrup

5 g yuzusap

15 g olive oil

salad mix (micro leaves)

Sakura® Cress

salt and pepper

oil for frying

Season the duck fillets and fry saignant. Peel the grapefruit “à vif” remove the slices and cut into smaller pieces. Mix all ingredients for the vinaigrette. Mix the salad with the Sakura® Cress, add some vinaigrette and taste.
