Bittersweet Chocolate Truffles

Truffles polenta canapes

For 2 persons.

– 200 g of polenta with black truffles

– 80 g truffle paste

– 150 g Istrian cow cheese with truffles

Meat roll stuffed with truffles and asparagus

For 4 persons.

– 500g of mixed minced meat (beef, pork)

– Salsa tartufata 170g

– Boiled asparagi 100g

– 70g of Istrian prosciutto

– 2 eggs

– 150g of sopped and drained bread (sopped in milk)

– Parmesan

– Garlic

– Parsley

– Onion

– Salt

– Vegeta spice mix

Istrian fuži (or other pasta) with truffles

For 4 persons.

– 500 g  of fuži (or other pasta)

– 120 g of butter

– 80 g  of preserved truffles

– 200 ml cooking cream

– Parmesan cheese

 

PREPARATION:  Boil Istrian fuži (or other pasta) in salted water for 12-15 minutes. Braise grated truffles, add cooking cream, Parmesan and a pinch of salt and cook briefly everything together. Pour the sauce over the cooked fuži (or other pasta) and mix up a bit. Sprinkle with Parmesan and finely chopped truffles.

ISTRIAN FUŽI WITH TRUFFLES

Istrian fritada (fried eggs) with truffles

For 4 persons.

– Istrian prosciutto 50g

– Tartufete (truffle slices) 80g

– Truffle flavoured olive oil

– 8 eggs
