White Risotto with Asparagus

This is a super easy to make and delicious and classy Istrian recipe.

Ingredients (4-6 people):

  • 1 bunch of wild asparagus (about 250 g)
  • 2 scallions
  • 1 small onion
  • 2 cloves of garlic
  • 300 g white rice
  • 1 l vegetable stock
  • San Gurmano Intense extra virgin olive oil
  • Salt
  • Good pinch of white pepper

Preparation (30 min):

  • Clean asparagus by removing the bottom stem part and keeping the tips
  • Clean and slice scallions.
  • Finely chop onion and garlic.
  • Heat olive oil and add onions. Stir until onions are clear, then add scallions and garlic.
  • Continue to simmer until tender.
  • Add the asparagus and cook several minutes, then add rice.
  • Stir gently until rice becomes transparent.
  • Slowly add vegetable stock and salt to taste, reduce the heat and simmer. Continue to add stock and cook until rice becomes soft.
  • Towards the end, stir gently, add a good pinch of freshly ground white pepper.
  • Serve warm, with a pinch of parmesan cheese and drizzled with San Gurmano Intense extra virgin olive oil.
