NoMU recipe: Wild Rice Salad

Cook your rice according to instructions on the box, taking care not to overcook it. Once cooked, rinse under cold water and allow to cool. Thinly slice your dried figs and roughly chop your parsley.

In a large bowl, combine the rice, figs, parsley, NoMU Pistachio and Sumac Dipper, extra virgin olive oil, dried cranberries, zest and juice of orange and lemon. Season with NoMU Just Salt and Pepper and toss well to combine all the flavours. Spoon into a gorgeous bowl to serve.

TIP: You can use any sort of grain, for example cous-cous, tabouleh or quinoa and you can substitute your dried fruits with apricots and raisins if figs or cranberries are not available.
